A dinner trick

During dinner time, do you ever have trouble getting your kids to eat their vegetables? We have a little trick to share: serve the vegetables as an appetizer.

Tell your littles it’s dinner time and to sit down at the table (or wherever your family eats dinner). Have an empty plate sitting in front of them, alongside their beverage and cutlery, and serve the veggies first. After the vegetable appetizer is served, continue with preparing dinner and let your child feed themselves.

When they first sit down for dinner, that is when they are the hungriest. They will start eating the veggies first simply because they are hungry. We’re not talking about a few lonely carrots plopped down on a plate, but a nicely presented plate of steamed broccolini with a small drizzle of melted organic cheese, or a bowl of shredded carrots with a vinaigrette dressing.

I know what you’re thinking, “but what if they don’t like carrots with vinaigrette dressing?” Not to worry, mom. We believe that it’s beneficial to experiment with different ways of serving veggies. That way, your child can try a variety of options and decide which recipe works for them.

The message we are trying to share is that vegetables, full of fiber and vitamins, are one of the most important staples in a child’s diet. We want them to love veggies from the start and when presented with the option, to always reach for that celery stick!

We have a few different vegetable appetizer recipes to share in case you are looking for some inspiration:

No. 1~ A bowl of shredded carrots and celery in a light vinaigrette dressing
No. 2~ Slices of roasted beats accompanied by goat cheese and arugula
No. 3~ Oven roasted asparagus pieces, drizzled with warm honey
No. 4~ “Ants on a log”~ celery stalk pieces filled with organic peanut butter , topped with organic raisins
No. 5~ Caprese salad~ tomato chunks, basil pieces, & small mozzarella squares, mixed together with a light vinegar dressing finish

A great snack option: Kale chips~ wash kale pieces, dry completely, lay flat on a baking sheet, preheat to 350 degrees, drizzle with olive oil and sea salt. Bake about 10-15 minutes, or until crispy. A terrific alternative to potato chips.
